Oil is usually lighter than the water, and would float on top of it and still continue to burn. And sometimes, adding cold water causes a very powerful blast of the fuel. You should know that you should never add even a drop of water onto hot oil in a frying pan; this is the same thing. The water causes the fuel to splattering, thus spreading the fire and making it burn more intensely.

The oil will float and spread on the pathway provided by the water. The fire will spread along with the oil. You have to cover the fire (deprive it of oxygen), or use an extinguisher that will do the same thing, to put it out.

the same reason you cannot put water on a chip pan fire. the oil sits on top of the water so this will spread the fire out making it harder to control.

Water is not used to put out some chemical fires because it spreads them. In the case of a grease fire, it is better to use a powder, such as baking soda, to extinguish the flames.

since the flammable oil is less dense it stays on top and burns, adding water will simply allow the oil to spread out more or simply splash it on everthing in the surrounding area.

Because oil and water are immiscible throwing water on burning oil usually does more to spread the burning oil around than to cool it and put out the flames.
