More recent operating systems multi-task. in other words, they are doing several things at once (stuff like looking for updates to Adobe and Java <lol>)
If you just "power off" the computer without doing what is called a graceful shutdown, you run the risk of leaving files only half-written, files half missing, files left open or corrupted in some way.
