5 panel drug tests only test for; THC, PCP, cocaine, amphetamine/Meth-amphetamine, and opiates. An opiate is a naturally occurring alkaloid of the opium poppy. The 5 panel test actually tests only for morphine although is says it tests for opiates. In reality it can detect; heroin, morphine, and codeine. Heroin is quickly metabolized into morphine in the body. Codeine is metabolized into several metabolites with morphine being one of them. Therefore, by testing for morphine metabolites, all three drugs can be detected. This is done by identifying simple chemical reaction that is selective to a specific metabolite. No other metabolites including those of; Hydrocodone, Oxycodone, or Fentanyl, can react to the test chemical.
Hydrocodone is an opiate, and opiates ARE included on the 5 panel or chem5. However, there are great variations in accuracy of tests and their quality. Typically only the naturally occurring opioids appear (morphine and its pro-drugs, codeine and heroin). Most 5 and 7 panels claim that hydrocodone and hydromorphone (Dilaudid) also show up, but I can tell you from daily experience that they usually don't on the cheaper ones. A more expensive screening looks specifically for semi-synthetics and synthetics (but you can guess which screening most companies go for!)

In this step of the process, the sample (urine, presumably) would be subjected to Gas Chromatography/Mass Spectrometry (GC/MS) testing, which would identify Dilaudid as the specific drug identified on the 12-panel screen.
