In Gran Turismo for the PSP, you unlock the Ferrari after completing the "Ferrari Challenge" event, which becomes available once you progress through the game's events and accumulate enough experience and credits. Specifically, you'll need to win races and achieve certain milestones in the game. Once you meet the requirements, the Ferrari models can be purchased from the dealership.
When you win the Historic Racing Car Cup you get the Lancia Stratos Rally Car '77, the only other way that I can think of is through the used car dealership.
To unlock the Audi Le Mans Quattro in Gran Turismo 4, you need to complete the "Endurance" races. Specifically, it becomes available after you win the "24 Hours of Le Mans" endurance race. Once you achieve this, the car will be added to your garage, and you can then use it in other races. Make sure to prepare adequately for the endurance race, as it requires a substantial time commitment.
Try using the Chapparal 2J. I used it and it's the beast. The car is 1 million credits, to get the money fast repeat the race in Special Conditions (the second one on Easy), sell the prize car (it's around 257000) and just repeat to get enough for the car.
