At first Jack is just as innocent as the rest of the boys on the island. Then when he starts hunting and killing pigs he is turned back to his primitive ways and the evil in him takes over. So in a way Jack represents evil in the book. But he does not represent the Devil, the pig's head on a stick or "Lord of the Flies" represents the Devil.

In "Lord of the Flies," Jack can be seen as more of a symbol of the darker aspects of human nature, such as savagery and selfishness. He represents the descent into chaos and violence that occurs when civilization and order are abandoned. Whether he is inherently good or evil is subjective and open to interpretation.
