As long as you are using water based paints, you should be able to paint with the house closed up. Running the air conditioner will remove the humidity from the air which will help the paint to dry in a reasonable time.

If someone in the household is intolerant to the fumes, they probably should not be in the house at all until the paint has dried whether the house is open or closed.
