An Excel spreadsheet is called a workbook. Each individual page is called a worksheet.

It defaults to Sheet1 in the open workbook which is Book1.
It is normally called Book followed by a number, which will depend on how many new files have been opened. So it would be Book1 for the first file. If you save it, it will be come Book1.xlsx or Book1.xls in older versions, unless you give it a new name, which you should always do.

The default file name for an MS Excel workbook is book1. I suppose because the programmer decided book made sense for a workbook and the 1 represents the first one you save. You can change the file name to whatever you like.
A workbook in Excel will be Book1.xlsx for versions from Excel 2007 onwards, or Book1.xls for earlier versions.
