Sift the all-purpose flour, using a sieve or flour sifter, into a bowl.
Measure 3/4 cup of flour from the all-purpose flour you just sifted, and pour it in a new bowl. A cup of sifted flour will weigh less than a cup of unsifted flour because sifting creates more volume, so if you scoop sifted flour, you are scooping less of it. Therefore, it is a good idea to sift more all-purpose flour than you might need.
I do not know the exact measurements for 3/4 cup, but here's a trick to make your own "cake" flour.
Measure out 1 cup of all purpose flour
Remove two tablespoons flour and place it back in the bin :)
Add 2 tablespoons of cornstarch to the remaining flour (to replace the 2 tablespoons flour you just removed)
Now sift the flour until well incorporated with the starch (usually about five times) and it's soft.
You made cake flour. Now you can just measure the 3/4 cup out you need for your recipe.
