I had a similar question asked to me by someone counting their calories. The problem was this: They had a 250g bag of pasta. The nutrition label gave 100grams of uncooked pasta (therefore, half a pack was 125grams). The label also gave the value for half a pack of cooked pasta which was 190 grams. The calories in 100gram uncooked was 172kcal, while half a pack of cooked jumped massively to 326kcal. Why? A quick mathematical look at this clearly showed that half a pack of uncooked pasta did not have the same amount of calories as the cooked pasta. So why is cooking pasta increasing calories, does water magically add water? A couple of weeks later, and luckily, we were eventually given information (that was at least believable) from a trainee medical student... They said that if you eat raw uncooked pasta, there is a lot of calories and nutrition that are not digestible by the human body. In other words, they go straight through your body. When you cook pasta and other carb-dense foods like rice and couscous, it alters the chemical makeup of the food (it kind of unlocks the remaining 'invisible' nutrition) and makes the previously undigestible nutrition available for the body to absorb.
