More simply said they are adaptation in the brain. Instincts also range in flexibility. For example a baby's instinct to suck on their mother's nipple is very inflexible all normally functioning babies do it no matter where they are born. On the other extreme language is instintual for humans but it is very flexible- what language you speak depends on when and where you where raised.
