Concrete setting time will depend on the concrete mix ( w/c ratio , slump requairemt etc.. ) and ambient temperature. This is of course for normal mix without adding special materials to the mix. Roughly stetting time will start from 1.5 hr in height temp to 18 hrs in cold temp.

The curing process for concrete goes on for a much longer time than you think, and is affected by temperatures. Most concrete will be set enough to walk on in 10-12 hours- HOWEVER, it will continue to cure and develop strength for several weeks. The design specs for concrete are usually given in terms of 28 day concrete- at 28 days of cure, it is around 98% of the strength it will reach. At 56 days, about 99.9%. For EXTREMELY large concrete pours (like the Hoover dam) cooling systems were embedded in the concrete to aid in the curing (concrete gets hot from the chemical reactions). Without that cooling system, the Hoover Dam (over 4 million yards of concrete) would have taken 50 years to cure.
