If stored right sweet potatoes can last up to a month. The climate that the sweet potatoes are given is key because if they are able to get wet they rot very easily. You should store them in a cupboard that you usually do not store much else in and that is a cool temperature. Always wash your sweet potatoes and allow them to sufficiently air dry before storing them away. Do not store them in a very tight bag because all potatoes need to 'breath'.

Only peel what you need. They can be stored in water for a few days in the refrigerator or cut into cubes, blanched and frozen. But both methods will result in a less than ideal potato. In the the freezer they should be good for 3-4 months.
