It depends on how you have stored it. Most drugs will slowly degrade over time, but this process will be quicker if the drug is exposed to heat or sunlight. The expiration date is usually very conservative, meaning the pharmaceutical companies err on the side of caution. So in most cases a few months over the expiration date won't matter all that much. In the case of amoxicillin there are no toxic degradations that could form, as far as I know.

If you do decide not to take it, please bring the unused drug to your pharmacist to be disposed of properly. If you were to just throw it away or flush it down the toilet, the drug would come into the environment, giving bacteria a chance to get used to it. This would would mean bacteria are less susceptible to drug the next time someone gets an infection.

For the same reason, please follow the treatment duration as on the drug information. If you take the drug too shortly, it might not kill all susceptible bacteria and if the disease relapses the bacteria would be immune to the drug.

It may have lost its potency. This will subject you to the potential side effects of the drug without all of the benefits, plus may partially treat the infection causing continued illness and drug resistance.

If you have a long standing prescription that you take occasionally as needed, such as for preventing heart infections with procedures, then you should throw it out and get a new prescription. If you are in the habit of not finishing the course prescribed and then taking it for a later infection without advice then this is a bad idea doe many reasons.
