In terms of concrete examples, here are a few major Islamic ideas that have been present or supported consistently throughout Islamic history.

Weliyat Al-Faqih (State of the Jurist): This is mentioned in the Community Answer, the idea among Shiites that the only person fit to rule over an Islamic Country is an Islamic Jurist or Faqih since that person will be able to create a truly desirable society. This remained a theoretical construct until the Islamic Revolution Iran created a real-world State of the Jurist. The modern nation of Iran and its major laws and systems exemplify what Islamic influence "should" look like in law.

Ahl Ad-Dhimmi wa-al-Kuffar (Discrimination Against Minorities): Islamic Law makes clear that there are different modes of treatment for different kinds of people. Muslims receive preferential treatment to Ahl Ad-Dhimma (the People of the Book who are protected) and to the Kuffar (the Polytheists and Non-Believers). The Muslim has superior access to justice (courts, etc.). The Muslim can proselytize while the Dhimmi cannot, and the Kafer must convert to Islam. The Muslim can live in whatever district he desires, but the Dhimmi can only live in certain areas. The Muslim is allowed the right to self-defense, but the Dhimmi is not allowed to have weapons of any type. In addition to discrimination against Dhimmi and Kuffar, Islamic Law also discriminates against women in the modern conception of a woman. Women are supposed to stay with the children, are criminally liable if they are raped, cannot work in the same facilities as men (according to Islamic Law), and must accept their husbands beating them. Sexual Minorities, like homosexuals, transsexuals, genderqueer, etc. are liable for execution based on their nature and activities.

Admittedly, in the 7th-14th centuries, this was a very enlightened position. Minorities had no rights in China or in Europe during this period and often found themselves forcibly converted or murdered. Time has changed, but Islamic Law has not.

Eqtisad Islami (Islamic Economics): Since usury is banned in Islam, there has now been the rise in Islamic Banking and Islamic Economics. These banks propose loans without interest.

Punishment via Mutilation: This is not central to Islamic Law and ways can be found around this, but most Islamic Countries prior to the 20th century (and some still to this day) continue the barbaric practice of mutilating people for legal violations. The most common citation of this is the idea that a thief's hand can be cut off for theft. The Taliban, in accordance with this principle, would pour acid in the eyes of women who sought education (whether a woman seeking an education is illegal in Islam is a source of contention, but the act of punishment is not.)

Prohibition of Non-Islamic Laws: The Community Answer mentions this off-hand, but this is a very serious set of laws. No law can be made that would be "insulting" to Islamic Sensibilities. This greatly curtails freedom of speech, freedom of assembly, and freedom of/from religion.
