You can get from Amsterdam to Maastricht by Hwy, train or plane. If you have no traffic jams, it wil take you 1.5 hour by car. Plane is a bit overdone, but you can go from schiphol airport to maastricht airport, no worries.

The Eurostar doesn't go to Copenhagen. You will need to go to Brussels or Paris and take a different train.
