Why do hills have winding roads?

instead of heading directly up the slope, which is very dificult for any car, the winding distributes the slope a little bit at a time, gradually reaching the top

For two reasons:

1- because these roads generally follow the path of least effort: if there is a big boulder or a particularly steep embankment, the roads are build to wind around these difficult sections, avoiding them.

2- Because the hills can be climbed gradually. If a path goes straight up the side of the mountain, this path will be very steep. If the path goes across the side of the mountain, climbing gradually, then it will be easier to climb. This will probably take longer but the alternative, a hill climbing straight up the side of the mountain, is dangerous for any car/bike/animal-pulled cart that doesn't have enough power to prevent them from slipping down and causing an accident. This is particularly true for animal pulled carts, which have less power and so there is a greater risk that the horse/donkey/person/cargo will slipping down the mountain.
