When I was in Morocco at a souk (or market) a vendor was selling Prickly Pear fruit which he had piled in a pannier carried by a donkey. When we asked to buy he used a pocket knife to peel the spiny skins off the fruit. The flesh was juicy and sweet and a bit pippy. So to answer your question: people eat Prickly pear cacti.

The saguaro cactus [Carnegiea gigantea] has much to offer to area wildlife. Its flowers, plum like fruits, and seeds are wildlife friendly. Additionally, its towering height and branching arms encourage nesting activity by a number of birds. So nesting birds are known to nibble their way through the plant's thickened outer skin, to form nesting cavities within the fleshy, juicy tissue inside.

Predatory birds include the cactus wren [Campylorhynchus brunneicapillus], elf owl [Micrathene whitneyi], gila woodpecker [Melanerpes uropygialis], gilded flicker[Colaptes chrysoides], red tailed hawk[Buteo jamaicensis], and white winged dove[Zenaida asiatica]. And these are just some of the predators that eat the above ground parts of the saguaro. Below ground, the roots entice members of the soil food web. So underground predators include bacteria, fungi, nematodes, and protozoa.
