Legally your godparents are the people who assume care of minor children in the event of the parents death. Therefore there can only be one set of legal godparents at a time. However any number of people may be named as godparents as long as the order of preference is defined.

For example a parent may name Grandpa, Uncle Joe and Aunt Jane as godparent stipulating that the chold go to Aunt Jane, and in the event of her death or inability the child goes to Grandpa, and Uncle Joe if Grandpa is unable, etc.

Two, one male and one female. You can have as little as one, either male or female.

I'm not so sure. My brother has two of each.

There can only be two official godparents , one of each gender. If more than two, that is OK, but theyare Christian witnesses. They can ge called godparents if desired by the family, it is just that they will not be entered into the official regsiter as godparents.

Baptists don't have godparents because they don't do infant baptism That is not to say it is forbidden; it just isn't part of that denomination's beliefs.

Do you name the godparents on the christening invitation?

It is not a requirement, but many people do include the names of the godparents on their child's Christening invitations. In some cases, the godparents are given the honor of extending the invitation to the Christening or Baptism ceremony, and so their names will subsequently be on the invitations. In other cases, the parents are the inviters and will honor the godparents by directly naming them on the invites.
