Zaphenath-paneah was the name that Pharaoh gave to Joseph when he made him governor of Egypt. This takes place in Genesis 41:41 in the Bible, so you can read it for yourself how it all happened. It was common in Egypt when for example a pharaoh ascended the throne for his name to be changed. I believe this is why Joseph's name was changed.

There are several Joseph's mentioned in the Bible. The Egyptian records never mention Joseph, and there is doubt whether he ever existed. However, the Book of Genesis credits him with holding the position of Grand Vizier, second only to the Pharoah.
The name Joseph is Hebrew. The Pharaoh did not give Joseph a Hebrew name, he gave him an Egyptian name, which was Zaphnathpaaneah. Genesis 41:45 And Pharaoh called Joseph's name Zaphnathpaaneah; and he gave him to wife Asenath the daughter of Potipherah priest of On. And Joseph went out over all the land of Egypt.

According to the bible Joseph was sold by his brothers to some traders going to Egypt. Joseph was later sold to Potiphar the captain of the palace guard. Joseph find favour with Pharaoh when he interprets a dream of pharaoh's. Pharaoh is pleased with Joseph and makes him governor of all Egypt. You can read the story in Genesis chapt 37 - 40
Genesis 47 details Joseph's settlement of the Israelites in Egypt.
Some verses about Joseph in the Bible include Genesis 37:3-4, where Joseph's father gives him a special coat, and Genesis 39:2-6, where Joseph is put in charge of Potiphar's household in Egypt. Another important verse is Genesis 41:14-16, where Joseph interprets Pharaoh's dreams and is made second-in-command in Egypt.
Simeon was in jail long enough for his brothers to return with their asses carrying their grain from Egypt back to Canaan, eat it all, and then have to return to Egypt for more. This would have been at least 1 year, so Simeon would have been in jail at least 1 year; (and Egyptian jails were not nice places!)
