Who invented potato chips?

User Avatar
From Wikipedia: According to a traditional story, the original potato chip recipe was created in Saratoga Springs, New York on August 24, 1853. Agitated by a patron repeatedly sending his fried potatoes back because they were too thick, soggy and bland, resort hotel chef, George Crum, decided to slice the potatoes as thin as possible, frying them until crisp and seasoning them with extra salt. Contrary to Crum's expectation, the patron (sometimes identified as Cornelius Vanderbilt) loved the new chips and they soon became a regular item on the lodge's menu under the name "Saratoga Chips". Alternative explanations of the provenance of potato chips date them to recipes in Shilling Cookery for the People by Alexis Soyer (1845) or Mary Randolph's The Virginia House-Wife (1824). An Italian chef. He was serving french fries to a guy in his restaurant, and he thought the french fries were much too thick. So, he complained to the chef and asked him to chop them down. Then, the man loved them, so then everyone wanted them, and then became potato chips. George Crum invented the potato chip. George Crum died in 1914. He was 92 years old when he died.

What gas is put into bags of crisps to stop them getting squashed?

User Avatar
Bags are filled with nitrogen, either pure or mixed with carbon dioxide, not so much to keep them inflated (that could be done with air), but to displace the oxygen, which would cause the oils to go rancid. Carbon dioxide is also used sometimes,

Why do potato chip bags make noise?

User Avatar
Its because the weak bonds between the polymer molecules break due to stress and the resultant energy is released as noise..(the stronger bonds keep the plastic together so you dont have to worry about crumpling your bag to dust with a great outburst of noise!) Basically the bags are made of polyethylene film which, untreated, is waxy and floppy and not very noisy. It is elastic rather than plastic, so it absorbs stresses quietly. However, to make the bags, the film is stretched to get it thin enough to be convenient to handle and cheap enough to give away with the goods. This partly aligns its molecules into stiffer sheets. To make the bags look better and the contents more anonymous, manufacturers add fillers for coloring and further stiffening. Due to the crystallization of the polymer made to make the plastic stronger. Old plastic bags from your grocery store used to stretch and rip, but now that they are crystallized and they don't stretch as much any more. The result is a bag which audibly protests every crinkle, crumple and abrasion.
