No. You cannot change classes in Fire Emblem 7, you can only promote your units.

It is impossible to see how many knight crests are in the game of Fire Emblem. If you get the member card from Rennac, at the end of the game, there are secret shops that you can buy them from, so you can have as many crests as you would like! Also, it depends on if you go Erika or Ephraim's way, and there are tons of things that can determine that, so it is impossible to have an exact number, since you can buy as many as you want to.
