Because in the Goblet of Fire, when Voldermort took some of Harry's blood, he took a bit of Lily's (Harry's mum) protection charm into him. When he tried to kill Harry that connection between them was still there so Harry couldn't be killed. Dumbledore tries to explain it at Kings Cross Station in the last book.
Harry is the seventh Horcrux. When Voldemort went after Lily & James Potter, but ended up killing them he ripped his soul. And by not being able to kill Harry a bit of his soul attached itself to the only living thing in the room, which was Harry as a baby.
