No you cannot. Luckily, you are given a warning before you attempt the Hoover Dam quest. Save your game in a separate slot before going to Hoover Dam and you should be able to continue it after you've beat the game. There may be DLC that allows you to continue the game after the final quest, but it's yet to be released.

∙ 12y agoNo. You cannot play new Vegas after you finish it other than restarting it. No matter how you do it, when you go to hoover dam for the battle it will ask you if you really want to go there. As the game will end when you finish the ending quest in hoover dam

∙ 9y agoNo, once you complete the main storyline, the game ends, so make sure everything is done before you pass the 'point of no return' (it will make it clear when you are about to commit to the final battle).
