Horses can be tamed by 7 different foods. After the horse is tamed you can ride it by right clicking. After the horse is tamed it can be ridden, but it won't go where you want it. You need to use a carrot on a stick to make the horse go where you want. It can be fashioned out of a fishing rod and a carrot.
1) You can right click the untamed horse to ride it. It will throw you off for a random amount of time until love hearts come out of it. This means it is now tamed.

This way you don't have to waste time being bucked off a horse whilst you have plenty of other things to do, but you will need quite a bit of food in order to tame it without riding it.
3) A friend who has already tamed a horse or somebody else's horse which you have found can also be ridden on even if you didn't tame it. This way you don't waste time or materials, but somebody could get angry that you stole their horse!
