They grow like everyone else, by age.

Horses are born very well developed and are able to stand and run after about two hours. They are called foals when they are very young. They have long gangly legs and are extremely cute!

As they grow up a bit, males are called colts, and females fillies, until they reach maturity at four, when males are called stallions (unless gelded) and females mares. Most start to be backed (trained) when they are around two years old, and started to be properly ridden when four. Some other breeds need more though.
