A souffle would demonstrate skill and contain dairy products (eggs). If you did some kind of cheese souffle that would increase the amount of dairy in it.
Alternatively, you could try a custard tart (the pastry making and lining the tin properly involves skill); look at the Portuguese custard tart for ideas. Chocolate (and maybe fruit) decoration would also increase the amount of skill in the dish.
Or, try a baked mousse. (Have a look at the chocolate baked mousse in "indulge" by Claire Clark). This also leaves plenty of room for decoration, to increase the amount of skill required in the dish.
Or, the french dessert "ile flotant" (floating islands, sometimes called "ouefs a la neige (snow eggs)) - Italian meringue poached in a vanilla custard. Plenty of skill and dairy in the dish.
