It also depends on if you mean "more mature" in a good (e.g. wiser) or bad (e.g. acting in ways totally inappropriate for their age group but appropriate for an older age group) sense.
Having mumps prior to puberty should not cause any issue with it.
Kids should grow to become more mature adults in the future.
Having plugged ears should not cause any of these problems. If you are having these problems, it is most likely the cause of your plugged ears and you should advice from a physician.

Stress can cause many odd reactions. Yes, itching is one symptom that people can have if they are anxious or stressed. Throwing a fit is not a very mature response to be having anyway. There are many better ways to respond to frustration that are more mature than having a tantrum.
In my opinion, I wouldn't date a freshman because he is way to old for you and trust it will not work cause he might expect you to act mature while you are still in 7th grade you might be older but still you are in your childhood
