There are2 options for drying thyme: the traditional and the fast.

a) The traditional: In the dark (to retain their color), warm, well ventilated and dry place to hang dry twigs tied into florets and wait patiently until dry. If you have leaves without a stalk, you can put in a loose pouch of tulle. It will take about 2-3 weeks. You can also spread it in a single layer on a tray dressed with paper and to also place in a warm and well ventilated place.

b) The fast: scatter the herb in an oven dish and let them 'Toast "with half open door at 80 degrees, as long as necessary (1-3 hours depends on the moisture of the herb).

Dried herbs are usually more pungent than fresh herbs. A good rule of thumb is to use 1 tsp of dried herb in place of 1 tbs fresh herb.

I use 1/16 of a teaspoon (a small pinch) of ground thyme for each sprig of fresh thyme. You would use 1/8 teaspoon for 2 sprigs of fresh thyme.
