The "official" hat is a brown fedora constructed of crushable, water-repellent wool felt.

Of course, the "official" hat is actually "officially licensed" and has everything to do with marketing and not realism.

While there were several hats used in the Indiana Jones series of movies, all were basically the same style: a dark brown, pre-WWII-style rabbit fur felt fedora with a dark brown grosgrain ribbon.

The problem with the officially licensed hats is that the crown is tapered -- narrower at the top than at the sides. Pre-WWII hats had non-tapered crowns and, thus, had a more boxy appearance than more modern hats.

Indiana Jones wore a gray fedora when he traveled about the seaplane and again at the end of "Raiders" when he was in a suit.
