Tolkien liked to play with languages. He invented his own language, that in his books was spoken by Elves. There were different dialects of Elvish, the most prominent being Quenya and Sindarin. He also liked to play with names, giving them a meaning, and not just jumbling together sounds.
One of Sauron's earlier names was Gorthaur, meaning "The Abhorred". The Quenyan root "thaur" in the Sindarin dialect is "saur". And "on" is an ending for many male names.
This is the history of how the Elves came to call this dark lord "Sauron". But how Tolkien arrived at that? We do not know. He invented it, using the language that he made up, thus giving it meaning. No one knows why "saur" and not anything else means "abhorrance". And why this particular word over all other evil names. This is just the way Tolkien's imagination worked.
