Nearly everyone who worked as a craftsman in the Middle Ages learned their craft by being apprenticed to professionals. This was true for cooks and bakers, just as it was for the others. A child started to work as an apprentice at about age seven or eight, and usually went through stages of apprenticeship to the point of being a journeyman at about the age 21. This last step was probably not necessary for a baker, unless he was doing some pretty fancy work.
