Well simply because they are "ultra(very) light (low weight)"

Let me clarify. There are heavy aircraft, like big transport planes. There are medium heavy aircraft like passenger jets. There are light (not heavy) aircraft like little private planes. Then there are Ultra Light aircarft which are vey light weight. So ultra meaning very and light meaning the opposite to heavy ... which maybe this answer is! LOL
