Most animals use their senses to find shelter, whether that be sight, smell or hearing. They also can use their natural abilities such as a rabbit being able to dig a burrow. There is also some memory involved. For example if an animal portals or forages in the same local area they can remember (by using the senses) where they previously found shelter or a safehouse.
Bobcats regularly have several dens within their particular range. They will 'den up' just about anywhere they can - under logs, in small caves, under that abandoned couch in your back yard... wherever there is not a lot of activity, so they can get a good rest. They 'catnap' twice a day, usually. See the related link below for more info:

Bobcats sometimes find the cat food or dog food that is left outside overnight for the domestic pets of uninformed yet well-intentioned pet owners. However; bobcats usually find their food in the forest. Bobcats are very good at sitting still and waiting for birds to land near to them. Then they pounce. Because bobcats have very good reflexes, they will also pounce upon prey that they just happen to startle, like mice or squirrels.

Not much. Cats are strictly carnivores - meat eaters. Apart from using them as shelter(when sneaking up on their prey) they don't have much use for plants
Yes, you can turn a kill shelter into a no kill shelter, but you would need to be prepared to find a way to care for any animals that you were unable to find homes for.
