They send down a sound wave (whose velocity they know) and measure how much time it takes for it to return.

Velocity=Distance/time

Distance=Velocity*time

They divide the distance by 2 (since the sonar wave has to return as well.)

They make thousands of these measurements to make a map of the ocean floor based on these distances.

The echo sounder measures sound waves. The ocean floor is examined by bouncing sound off the floor of the ocean. It enables the examiner to measure the time between each elevation.
