How do you jump of gryphon in World of Warcraft?

If you are referring to a Gryphon Mount, such as the one you can use once you have the flying skill, there are three options:

1) Dismount by clicking the mount's button on your action bar (assuming you put it there) or by clicking "dismount" on the mount page in your spellbook.

2) Dismount by right-clicking the flying mount in your buffs.

3) Casting any spell if you have "dismount on cast" active from your interface options.

If you are referring to the Gryphon mount you fly on when going from flightpoint to flightpoint, you cannot jump off until you reached your destination. If you want to abort your flight earlier, the only way is to log out and then log in again. Upon login, the gryphon will fly to the next destination and then drop you off.
