½ cup oil

1 ½ tsp. vanilla extract

In large mixing bowl:

2 - 1/8 cups flour

2 tsp baking powder

½ tsp baking soda

Place the 1 tbsp of vinegar in a liquid measuring cup and fill the cup with milk to equal 1 ½ cups. Stir well (the mixture will curdle).

Add the canola oil, vanilla extract.

In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda, and salt.

Add the wet to the dry ingredients and beat until smooth using a hand-held mixer, stopping once to scrape down the sides of the bowl.

Fill cake pans half full. Bake 15 to 20 min. or until an inserted toothpick comes out clean and dry from the centre of the cake.

Let cool for 5 min then place on a wire rack.

If not frosting, and you want it to look festive, sprinkle coloured baking candies over the top before baking.
