Well, If you cut the cauliflower evenly into 2 then it would serve two, then again if you cut it equally into 3 it would serve three people. So One cauliflower should serve 1-3 people. HOWEVER, cauliflowers are all different sizes So it could be cut more or less.

Heads are all different. I would say on average 8 -16 servings per head.

Basing that on 'heads ' is misleading . I often see heads from 1-3 pounds. I would make 65 pounds of cauliflower for 250 people

You need about 25 pounds of cauliflower. - You can't measure it by heads, they are all different
