It depends who "you" are. By modern standards, people in the middle ages would seem boorish, rude, and filthy. Most of our social ettiquette dates from after the middle ages. In the east, bathing was more common in the middle ages, but other practices (such as bathroom... things...) were disgusting pretty much everywhere.
No, it uses potatoes and they didn't eat potatoes in the middle ages. They weren't introduced in Europe until much later.
Much of the chaos of the Middle Ages was the result of invasions of various people in the Age of Migrations. But that was only in the first quarter of the Middle Ages. I really do not think the Middle Ages were much more chaotic that most other ages once that time was over.
