You answered your own question . . . it sounds hollow and muffled because you put Speed Cream on your bearings. This keeps the bearing parts from rattling around loosely, making noise. Your board is sounding the way it should . . .
Before buying skateboard bearing you need to have knowledge regarding whether it has good load capacity or not. Along with that checking the lubrication and ensure easy maintenance is important. It typically depends on the brew and how much cream and sugar you put in it.
I would imagine they put it together in two halves, put the the cream in one half, and then put it together.
If the trucks use 8mm bearings (probably do, most of them do) then yes.

The washer goes in between the trucks and the bearings for best result and the bearings should have a little space when put on.
The bearings are usually silver looking discs that are in the wheels. They can be any color, but since they are usually metal, the most common color is silver.
