Zuko is 16. He was banished at the age of 13 and returns to the fire nation three years later, which is during the span of the series. The series only follows the Avatar Gang for the span of one year.
On "The Day of Black Sun," Zuko says, "My father, who challenged me--a 13-year-old boy--to an Agni Kai! How could you possibly justify a duel with a child?"
Because he says he was 13 when he was banished, and because we know from previous episodes that Zuko has been banished/hunting the Avatar for 3 years, we can figure that dear Zuzu is 16 in the series' present day. :]

However, it is never mentioned when her birthday is.

Sokka begins the series at 15. We don't know if he has a birthday sometime along the journey, so he may be 16 by the time of the Book 3 finale.

He matures nearer the end of the series - we see him get stronger (physically and emotionally) and he gets some sexy muscles ;D

What is Avatar the Last Airbender about?
Avatar: the Last Airbender is about the spirit of the world in human form, so when ever (s)he dies, (s)he reincarnates into a new life. In the Avatar world (which is made up by the Water Tribes, Earth Kingdom, Fire Nation, and Air Temples) there are regular humans and "benders." Benders can "bend" the four elements, which mean they use a form of martial arts to move their element (water, earth, fire, and air). Then, in the very last episode of Avatar the Last Airbender, Aang and Katara finally kiss.
