If you are pleading not guilty on 2 speeding tickets in another state will the judge be aware of the 2nd ticket when you go to court for the first?

Not unless the two charges were laid at the same time and place.
If you have two separate speeding tickets, laid on different days, by different Officers, they will be heard at different times and dates, as the two different Police officers have different "Court days" , when they attend court for all the tickets they wrote in a 2 week period.
I'd be careful about pleading "not guilty" on a speeding charge. Many Judges will charge you the MAXIMUM penalty, and require immediate payment, that day, if they feel that you are wasting the court's time. Remember that they hear dozens of similar charges each week and the chances of you having a NEW ARGUMENT are pretty slim.
