In chemistry, as far as I know it usually stands for the mass, in g. Energy wise, still in chemistry, it standa for mass of the surroundings - similar things.

"M" is a symbol representing Molarity, which is mols per liter or mol/L (mols over liters). "M" also represents the concentration of a molecule, ion, or any such solution. It is changed when g's, L's, or other substances are added to the solution.

The capital letter M stands for molarity. It is the concentration of a compound in a solution. M stands for the units mol/dm^3. i.e. 0.02M = 0.02mol/dm^3= 0.02 mols of a compound in 1 dm^3 of water.
