I think that the years he was most productive in were the twenties and thirties, but most people say his best years were from the fifties to the mid-sixties, from about "Strangers on a Train" to "Marnie". (Think of the films in the middle: "Rear Window", "To Catch a Thief", "Vertigo", "North by Northwest", "Psycho", and "The Birds".)
It is probably a toss-up between The Birds and Psycho.
If you are alone and it is dark, raining, cold, you have no coat, you don't know where you are, and strange, unfamiliar noises are coming from all around, it is frightening. If you are alone and you are in a beautiful meadow in the spring, birds are singing, it is shady, a river is running by, it is still frightening. You are alone. If you have your entire family and all of your friends with you in the beautiful meadow, it is no longer frightening. You are together. If you are with your entire family and all of your friends in the dark, rainy, cold, strange, unfamiliar place, then it is no longer frightening either. You are still together. You are no longer alone. Therefore, it is extremely, extraordinarily, impossibly, hugely, unimaginably frightening to be alone.
Alfred Hitchcock's The Birds was never a black-and-white movie. Psycho was his last black-and-white movie, and it came out in 1960. The Birds came out in 1963, thus, it was always a color movie.
