A canon pairing is a romantic/sexual relationship legitimately proven or highly supported throughout the series/show/novel that the characters interact in. A canon pairing can also be confirmed by the creator of the characters in a real-life situation (ie: interview).

For example, Tidus and Yuna is a canon couple, but not so with Auron and Yunalesca (I made that one up myself, FFX has too many couples).
