Guilds were organizations, usually gathering together those who performed similar crafts (i.e. Painters Guild). They functioned to train apprentices and teach them the "secrets and mysteries" of their craft. These techniques/recipes/etc were usually kept secret from outsiders so that the guild could maintain strict control over their members and their work.
Because of this, you needed to hire the stonemasons guild to have good stone work done (for example, on a cathedral). This allowed the guilds to negotiate their own prices and working environments, like modern day unions.
Guilds didn't control everything, and there were some cities, or even entire countries, that refused to recognize a guild. These used "free" labor, which meant not that the workers weren't paid, but that they were free of any obligations to any guild (i.e. free stonemasons).

Merchant guilds provided loans and aid to merchants and their families. A merchant guild was a group of workers in the same industry during the Middle Ages. Merchant guilds also helped with trade between other civilizations.

The only difference was what they made or sold.
Among the oldest guilds were those for stone masons and glass makers. But there were guilds of all sorts, and in guild oriented cities, many or most jobs were involved in the guild structure. There were carpenters' guilds and bakers' guilds and cobblers' guilds. There were even guilds that were entirely female, such as the silk guilds of Paris and Cologne.
