Processed meat refers to meat that has been preserved by smoking, curing, salting or adding preservatives. This includes sausages, bacon, ham, salami and pates. Therefore, using this definition, all ham is processed. However, some forms of ham are processed more than others.

Some ham is a meat cut that has been preserved by smoking or salting and can still be on the bone. You can find this in proper butcher shops and good supermarkets. You can also find this meat cut as sliced ham and cured in different ways.

Then there is the cheaper reconstituted hams, such as luncheon ham, canned ham. These might have a higher fat content and contain a lot of chemical additives.

You can also tell the difference by the taste, texture and by reading the packaging.
