What is the bolt size - socket size - on the thermostat housing on 2000 Chevy Cavalier 2.2L?

8mm is the socket size. Try and find a 6 point socket if you can, instead of a 12 point. Those little boogers round off very easily. I'm surprised GM didn't engineer a larger, stronger bolt for that application.
