Well, it depends on whether you are talking east coast or west coast of the US. The mahi mahi you are referring to does not exist on the east coast. It looks the same but it is technically dauphin (pronounced dolphin) in the Caribbean. Blue or white marlin? would be my other question. On the east coast and in the Carribbean we use, ideally, live pilchers; a long, narrow fish usually caught live each morning by netting. They are about ten inches to a foot long, shiny silver and both of those species love them. Dauphin love to hang around the weed lines that float in the Gulf Stream and their favorite delicacy is the small seahorses that use the weed line to hide in.
