The belief that Jesus Christ died and rose again after three days is fundamental to the Christian faith. If Jesus died and that was it, He would just be another prophet. But the fact that He rose from the dead proves His power as the Son of God. I was told that, back then (I don't know if this is still true), the Jews believed that on the third day of death, the spirit left the body. The fact that Jesus rose on the third day was, in that aspect, something that was considered impossible (I find it amazing how God specializes in doing the "impossible").
Since He rose from the dead and ascended to the right hand of the throne of God, He has the power to intercede on our behalf; thus Jesus' statement "I am the Way, the Truth, and the Life. No one can come to the Father except through me."
Also, this is another event which proves that He is the "Living God". Christianity, if I remember correctly, is the only religions whose Deity is alive and active in everyday life (miracles, answering prayers, etc.).

ANSWER: For one thing we (Christians) know that God the Father accepted Jesus' death as the sacrifice for man's sin by resurrecting Him. For another we as Christians know that we will be resurrected as Jesus was the "First fruit" and we will follow in resurrection. If Jesus was not resurrected we have no hope of eternal life and I might add most miserable in this life. Read First Corinthians 15:12-19.
Jesus highlighted the power of Jehovah, his Heavenly Father. His death highlighted his love for mankind, that he would submit himself as a sacrifice for sinful humans. His resurrection meant that the death no longer had dominance over him. It meant that he had defeated the grave.
The resurrection is when man is changed from mortality to immortality. Death will no longer have claim on mankind. During these periods of resurrection mankind will be judged by their deeds on earth.
