Armenian or Hebrew
The Assyrian language as you call it does not exist. The Ancient Assyrians are extinct and the language they spoke was Akkadian. The people that call themselves Assyrian today are actually of Aramean heritage and the language they all speak is forms of Aramaean/Aramaic and nothing else.
All Chaldean's are guaranteed to be Catholic! They speak Chaldean, which is a modern version of Aramaic, the language that Jesus spoke. The Chaldean language is very similar to Assyrian, and the Chaldean culture is very similar to that of Catholic Syriac's.
The kashykians
They spoke Norse, which is closest to Icelandic and Faroese.
The people from Spain (Spanish) spoke Spanish.
They mostly spoke English but some people, mostly elder people spoke Pottawatomie language. Pottawatomie language is a musical language with complicated verbs.
Germanic languages were spoken by ancient Germanic tribes and later evolved into modern German, English, Dutch, and other languages. Some famous Germanic-speaking figures include the Anglo-Saxon warriors who invaded England, Charlemagne of the Franks, and the Gothic tribes in Eastern Europe.
The ancient people who spoke Latin were the Romans. Latin was the language of ancient Rome and was used in various forms throughout the Roman Empire for communication, literature, and governance.
The people of Herculaneum spoke a form of Latin known as Vulgar Latin, which was the common spoken language of the Roman Empire.
Most probably that was a language similar to the one used by the Norsemen. Nowadays the most similar one would be Icelandic as an example of isolated medieval Norwegian.

The Chickasaw people historically spoke the Chickasaw language, which belongs to the Muskogean language family. Today, efforts are being made to revitalize and preserve the Chickasaw language.
